Which Asian cuisine is my favorite? You really have to ask that?

Japanese, of course. :3

Now, regarding any *new* cuisines I've learned, I like Cantonese and Beijing styles, found Korean is nice, and even found a few non-chili-hot Thai dishes.

If I had to pick a singular dish that I made in class that I really liked (and hadn't made before the class), I'd say it's the Jeera Pilaf from northern India. Flavorful, spicy but not hot, and has a wonderful aroma. :3
